Recipes and Fun Stuff
I've always liked to bake, which led to my sweet tooth, or maybe it's the other way around! Anyway, I'd thought I'd share a few of my favorite recipes. I'd like to encourage you to share recipes as well on our Facebook page. We'll do our best to share them on out website!
After all, nothing beats the smell of warm baked goods in a home!
Molasses Spice Cookies with Chocolate Chunks:
2 1/2 c. all purpose flour 1/2 tsp. ground cloves 1 large egg yolk
1 tsp. baking powder 10 tsp. unsalted butter, softened 1/4 c. molasses
1/2 tsp. baking soda 1/2 c. granulated sugar 1 tsp. vanilla
3/4 tsp. salt 1/2 c. dark brown sugar 1 4 oz. bar bittersweet
1 tsp. cinnamon 1 large egg chocolate, chopped
Heat oven to 375 degrees. Sift together flour, powder, soda, salt, cinnamon and cloves. Beat butter, 1/4 c. granulated sugar, and brown sugar until fluffy. Add egg and egg yolk, mix to combine. Add molasses and vanilla, mix thoroughly. Add dry ingredients in two batches. Combine. Stir in chocolate chunks. Shape dough into two tablespoon balls and roll in remaining sugar. Bake 9 to 10 minutes. Remove and cool on rack.
How about the morning muffin? This is one of our favorite recipes...it's yummy and actually quite healthy!
Applesauce Oatmeal Muffins
1 1/2 c. oats (quick or old fashioned, uncooked 1 c. unsweetened applesauce
1 1/4 c. all purpose flour 1/2 c. skim milk
3/4 tsp. cinnamon (or more if you like) 1/2 c. firmly packed brown sugar
1 tsp. baking powder 3 tbsp. vegetable oil
3/4 tsp. baking soda 1 egg white
Heat oven to 400 degrees. Line 12 medium muffin cups with paper baking cups. Combine oats, flour, cinnamon, baking powder and baking soda. Add applesauce, milk, brown sugar, oil and egg whie; mix just until dry ingredients are moistened. Fill muffin cups almost full. Add topping evenly over each cup.
Topping: 1 tbsp. margarine melted, 1/4 c. oats (quick or oldfashioned uncooked), 1 tbsp. firmly packed brown sugar and 1/4 tsp. cinnamon.
Bake 18 minutes.
